Water Buffalo Milk In Big Demand
Dubi Ayalon isn't your average Wisconsin dairyman, and his cows are about as
far as you can get fr Holsteins. The former Israeli special forces soldier and
school teacher has a water buffalo herd that he'll milk for the first time when
they calve later this spring. Water buffalo milk is in big demand for making
authentic Italian-style mozzarella cheese.
"Restaurants in Chicago importing it now are calling me to ask when we
will have cheese available," he says. "The price for the milk is high,
but the money for the cheese is even higher." Ayalon didn't know anything
about raising cows, much less water buffalo, when he started. He doesn't know
anything about making cheese either, but he is ready to learn.
"At first I'll sell the milk to Cedar Grove Cheese, and they'll make the
cheese. I'll work for the cheese maker to learn how to make it and then make my
own cheese," he says.
Right now all his herd is making is manure. During the winter, he feeds each
animal about 4 1/2 lbs. of grain a day. In the summer, when they're on pasture,
grain drops back to a pound a day. However, they eat lots of hay.
Ayalon hopes to have 10 cows in production this summer, but even then he
won't have milk to sell immediately. He plans to let the calves nurse for
several months to get them off to a good start, as the Italians do. Then he'll
begin milking. Daily production can vary from 10 to 50 lbs. per animal.
"If I'm a genius at taking care of them, I may get 25 lbs. per day. If
I'm okay, I may get 15 lbs. per day," he says.
Water buffalo meat is also in strong demand. Like the milk, the meat is very
low in cholesterol. While he expects to sell males, he has no plan to sell
females until he reaches his goal.
One difficulty has been to find equipment to handle the animals. He has found
a man who will make special headlocks for him, as standard stanchions don't
work. And the animal's legs have to be chained in place during milking, he says.
He was concerned about finding a milking machine. While at the Wisconsin Dairy
Expo, he spoke with a company that ships equipment to Southeast Asia for water
buffalo milking.
Ayalon recognizes that his is a long-term project and one he has to learn as
he goes. His goal is to get to 30 milking animals. He has no desire to go above
that number. He sees water buffalo as a good niche for a small farmer.
"In my opinion, a lot of farmers who want to be small need to be
unique," says Ayalon. "If a farmer really wants to get rich, he should
milk camels. In Israel camel milk is in very high demand. It's thought to be
very healthy for you. There's even an old story that it works like Viagra. I
would milk them, but I broke my back riding one, so I don't like them."

Center), on November 28, introduced
people coming from different countries and explained
the objectives of the workshop: to have a
common strategy to improve genetic and milk production
in dairy buffaloes.
Dr. Brian Wickham, representing ICAR (International
Committee for Animal Recording)
showed the activity of ICAR in different species in the
world, speaking about the dairy selection
indexes and selection criteria for milk production, or
for fat and protein or economic indexes and so
on.
Dr. Joao Durr, representing INTERBULL, showed his
activity, particularly for dairy cattle
improvement, speaking about progeny testing, artificial
insemination, embryo transfer and
multiple trait sire models. Dr.
John Williams (Director Parco Tecnologico
Padano, Italy) explained the Buffalo Genome Project,
coordinated by Italy, including different
breeds from Swamp and River subspecies, as Mediterranean
Italian, Nili Ravi, Murrah,
Jaffarabady.
Dr. Kamlesh Trivedi (National Dairy Development Board, India)
presented the activity of recording
and progeny testing in India. Prof.
Antonio Borghese (General Secretary
International Buffalo Federation, Italy) showed the genetic
improvement realized in Italy, based on
buffalo recording (55,000 females recorded, 26% of total
dairy population), on selection, on progeny
test, on artificial insemination techniques, with the result
to have many champions producing more
than 5,000 liters milk in 270 days of lactation. Dr. Claudio
Varella Bruna (Buffalo Breeders
Association, Brazil) showed the state of production, recording,
artificial insemination and EBV
calculation in Brazil, as Prof. Talat Naseer Pasha (University
of Veterinary and Animal Science,
Lahore, Pakistan) made the same for Pakistan, as Dr.
Zhang Xiufang (Guangxi Buffalo Research
Institute, China) made the same for China, as Dr. E.B.
Flores (Philippines Carabao Center) made the
same for Philippines.
The day November 29 was dedicated on the creation
of an agreement and commitment between
international collaborators for dairy buffalo genetic improvement
and on a stable link between
International Buffalo Federation and ICAR and INTERBULL
for common strategies for genetic

Swiss mozzarella
In a world of rising cheese consumption, there
appears to be little envy of the mozzarella farmers among Switzerland's
other cheese makers, most of whom are operating at capacity.
But it is a different story with Italy. "The
Italians are not very happy over the fact that the Swiss are making
mozzarella," said Francesca Heiniger, the spokeswoman for Switzerland
Cheese Marketing, the organization in Bern that promotes
Swiss cheeses
abroad. The Italian name
mozzarella di bufala is protected by law, so Mr. Bieri and his friends
have adopted the German-Italian hybrid Büffelmozzarella.
The success of domestic Swiss mozzarella has cut
into imports of mozzarella, which dropped in 2005 by 789 tons, Ms.
Heineger's organization said. But the damage was suffered mainly by big
Italian producers of cow's milk mozzarella, not the higher priced
buffalo milk variety. Its sales to
Switzerland soared
last year.
"Exports of our cheese to Switzerland have
doubled," said Gennaro
Testa, an official of the National Consortium for the Protection of
Mozzarella di Bufala Campana, the group that promotes genuine
buffalo milk mozzarella in the Naples area of Italy. In fact, he said,
the success of Swiss mozzarella, "is a kind of promotion that we enjoy."

Buffalo farm wins national award for home-bred veal

AN award-winning farm, famous for its unusual animals, has won
another major title and is looking for farmers to rear water buffalo
for them.
Kate and Paul Langthorne have a thriving business mostly based on
their 300 head of buffalo and now need to find more space to expand
the herd still further.
The couple have a wide variety of exotic animals on their farm at
Crawford Grange, Brompton, near Northallerton, but it is still their
buffalo meat, milk and cheese which is the most popular they sell
more than 1,000 buffalo burgers alone each week.
Their success has already earned them such titles as Rural Retailer
of the Year and Yorkshire Farm Business of the Year.
Now they have won the national Taste of Excellence Award for their
veal in the Food and Farming Awards presented at the House of
Commons.
The taste experts from Marks & Spencer said their rose veal was "to
die for".
The couple have sold their own "free range" veal for four years and
have found a steady increase in demand.
Customers have included presenter Janet Street Porter, who reared two
veal calves for one of celebrity chef Gordon Ramsays TV series.
She reared them in North Yorkshire and, before they were ready,
bought veal from the Langthornes for a tasting session at Ripon
farmers market.
Mr Langthorne said: "The series raised the profile of veal and we
find people are quite happy to try it, we have it available all the
time."
The veal is six months old. The calves are all born and raised on the
farm which now has its own abattoir.
The abattoir means that none of the buffalo, cattle, sheep and pigs
born on the farm ever have to leave it and remain stress-free.
It also means absolute guaranteed assurance and traceability for
customers.
The Langthornes were invited to submit some of their veal for the
award and samples were cooked and tasted by experts in Marks &
Spencers own tasting centre.
"They did a blind-tasting and told us ours was to die for," said Mrs
Langthorne.
The couple began farming water buffalo in 1997 after their son,
Andrew, who has cystic fibrosis, was unable to drink cows milk.
Today they have around 300 buffalo which are bred for meat, milk and
cheese production.
They also have yaks, Aberdeen Angus and Dexter cattle, along with
some Highland and White Park.
Sheep include a commercial flock, alongside Soay and Hebridean, and
there are also goats, emus, bison, elks, pigs, wild boar and a
handful of endangered Pere David deer.
They estimate there are now around 1,000 animals on the farm hence
the need to find other farmers to help increase their buffalo
numbers.
Mr Langthorne said they are very easy to keep.
He said: "They just need a normal fence and a strand of electric wire
but are no different to any other stock. They are very docile but can
be a bit stubborn."
The couple attend 12 farmers markets a month including Redcar,
Pinchinthorpe, Harrogate, Hartlepool, Darlington, Richmond, Ripon,
Stockton, Northallerton and Leyburn.
They also supply some restaurants and other outlets and sell from the
farm they have found a brisk trade among Gurkha families stationed at
Catterick who are attracted by the freshness of the meat.
